Because of the fact that they are already relevant for that search term, you can get that relevance to be transferred to you by getting a link from their website. This works even if the link to your website is not on the same page that is ranking above yours.

If you have been in the SEO game for some time, you must have heard for about a thousand times that the kind of links that Google loves are editorial links.

This is not without any reason.
